When we eat a largely raw food diet, we preserve foods natural enzymes, allowing them to digest seamlessly.  Properly combining foods for easy detoxification makes this process easier for our bodies to handle. When we digest food easily, our bodies have the ability to access optimal nutrition, while allowing us to heal our bodies, without feeling tired and hungry as if we were on a traditional "diet."  This is detoxification and living well at its best!
 
Research has long shown that eating a largely plant based diet can prevent serious disease, prolong life, and help us feel and look younger. Now there is evidence of dramatically increased benefits from eating a raw plant based diet. A raw food diet is one made up of raw fruits, vegetables, legumes, nuts, seeds and grains. Foods are heated to no more than 112F, preventing the destruction of precious enzymes. Known as the “life force” in foods, enzymes are believed to improve digestion and fight disease.
 
Eating a healthy and mostly raw vegetarian diet, however, can be easier said than done.  Up until quite recently, raw food trends have been associated with heavy nut-based meals that take hours to prepare, or are lacking in culinary creativity. This has been a challenge for many of us who want to eat a largely raw food diet, but don’t want to spend hours in the kitchen.
